Honey Garlic Salmon with Roasted Vegetables
Tender salmon fillets glazed in a sticky honey-garlic sauce, served on a bed of roasted seasonal vegetables. Ready in under 30 minutes.
Ingredients
- 2 filletssalmon fillets (skin-on)
- 3 tbsphoney
- 2 tbspsoy sauce
- 4 clovesgarlic cloves, minced
- 2 tbspolive oil
- 200 gbroccoli florets
- 1 mediumsweet potato, cubed
- 1 wholered onion, quartered

- 1 tspsesame seeds (for garnish)

Preheat oven to 200°C (400°F). Toss the sweet potato, broccoli, and red onion with olive oil, salt, and pepper. Spread on a lined baking sheet and roast for 15 minutes.

While the vegetables roast, whisk together honey, soy sauce, and minced garlic.

Pat the salmon fillets dry, season with salt and pepper, and place skin-side down on the baking sheet alongside the vegetables.

Brush the salmon generously with the honey-garlic glaze. Return to the oven for 12-15 minutes, basting once halfway through, until the salmon flakes easily.

Plate the roasted vegetables, top with the glazed salmon, and sprinkle with sesame seeds. Serve immediately.
