Peanut butter noodles with crispy tofu and veggies

Ingredients

  • 200 gRice noodles
  • 200 gTofu
  • 1 tbspPeanut butter
  • 1 tbspSoy sauce
  • 1 pieceCarrot
  • 20 gSpinach

Instructions

    First prepare the noodle sauce by mixing together peanut butter, soy sauce, grated garlic, ginger and sugar

    Boil the noodles according to the packaging

    Cut the tofu into cubes and fry on medium high heat. Set aside.

    Shave carrot and wash spinach leaves.

  5. 5

    Once the noodles are done cooking wash them with warm water and add back to the pan. Add the sauce, carrot shavings and spinach. Mix together.

    Top the noodles with fried tofu, handful of spring onions, sesame seeds and peanuts.
